Shot conversion separates a finisher from somebody who simply shoots a lot. Here is what the archive says a good one looks like.

Forwards finish higher, and it is not close
The median archived forward converts 40.0% and the top tenth 64.7%. That is expected rather than impressive: forwards take their shots from closer in, so the same finishing produces a better rate.

Defenders sit at the bottom of this table and most of them never score at all, which is why a conversion figure on a centre-back says almost nothing.
Conversion is not accuracy
These get mixed up constantly. Accuracy is the share of shots on target. Conversion is the share that end up as goals. Somebody can hit the target every time and convert almost nothing, and EA reports both, which is how the confusion survives.
A high rate is also not automatically good. One shot a game from six yards converts better than four from range and scores fewer goals. Read it next to how often somebody shoots.
