How do you win headers in FC 26 Pro Clubs?
Jumping higher is the smaller half of it. The mechanic EA added this year is about who gets to stand where before the ball arrives.

Not jumping. The new aerial mechanic in FC 26 is settled by the Strength gap between the two players waiting for the ball.
The new mechanic is about position, before the jump
EA added Contested Box Outs to FC 26. A stronger player can hold an opponent away while both wait for an incoming air ball, by using the shield button when already in front of them. EA says the effectiveness is based on the Strength difference between the two players.
It has a condition attached. The action only triggers if your player is in a good position waiting for the ball, so it rewards arriving early and does nothing for a player scrambling across at the last moment. Once it has fired you can move into any other action, including the header itself or a trap.
That makes the aerial contest a two-part job. Win the ground first with Strength and timing, and only then does the jump decide anything.
Two heading PlayStyles, at opposite ends of the pitch
EA removed Aerial and Power Header and replaced them with a defensive one and an attacking one. Picking the wrong half of that pair is a wasted slot, because one of them does nothing in the opposition box.

Read the words EA used for Aerial Fortress carefully. The holder dominates aerial battles only in defensive scenarios, which is a restriction the old Aerial PlayStyle did not carry. A striker who slots it will get nothing back from it at a corner they are attacking.
Precision Header is the other direction. EA describes it as controlled, accurate heading instead of raw power toward goal, refined out of Power Header with more weight on aerial battles and heading accuracy.
Clubs heads the ball worse than Career Mode does
This one surprises people. Competitive gameplay carries increased heading error relative to Authentic, EA says so in its own list of the differences between the two presets, and Clubs is locked to Competitive with no toggle anywhere.
So a header you would bury in Career Mode is a genuinely harder ball in your Clubs match. That is a design choice about randomness and assistance, and there is nothing on your build screen that buys it back.
Corners changed too
Competitive increases the variability of corner kick outcomes and sends fewer attacking players up by default. EA also adjusted the positioning and run locations of attacking players at corners generally, to reduce congestion and the counter-attacks that came off it.
You do get more control over who goes. FC 26 added Top of Box and Defensive Cover to the attacking corner assignments and four separate defensive ones, all on the Assignments tab, so a club that keeps conceding from corners has something concrete to change.
Nothing here counts headers
EA sends no heading counter with a match. A headed goal arrives as a goal, an aerial duel arrives as nothing at all, and no tracker holding these endpoints can tell you how many you win. Every published aerial win rate for Pro Clubs was invented by somebody.
